Creating a Pumpkin Spice Latte Cocktail with Springbrook Cowboy Coffee and Birddog Pumpkin Spice Whiskey is a delightful way to enjoy the flavors of fall. Here's a recipe for you:


  • 1.5 oz Birddog Pumpkin Spice Whiskey
  • 1 oz Springbrook Cowboy Coffee (or cold brew coffee)
  • 1 oz milk or cream
  • 0.5 oz pumpkin spice simple syrup (adjust to taste)
  • 1/4 tsp pumpkin pie spice
  • Ice
  • Whipped cream (optional)
  • Cinnamon stick or ground cinnamon (for garnish)
  • Cinnamon sugar (for rimming, optional)


  1. Rim the Glass (Optional): If you'd like, you can rim your glass with cinnamon sugar. To do this, wet the rim of your glass with water or simple syrup, and then dip it into a shallow dish filled with cinnamon sugar to coat the rim.

  2. Prepare the Cocktail: Fill a cocktail shaker with ice. Add the Birddog Pumpkin Spice Whiskey, Springbrook Cowboy Coffee, milk or cream, simple syrup, and pumpkin pie spice to the shaker.

  3. Shake It Up: Secure the lid on the shaker and shake vigorously for about 10-15 seconds. This will chill the drink and create a nice froth.

  4. Strain Into Glass: Strain the cocktail mixture into your prepared glass filled with ice.

  5. Garnish: If desired, top your Pumpkin Spice Latte Cocktail with a dollop of whipped cream and a sprinkle of additional pumpkin pie spice. You can also add a cinnamon stick for an extra touch of autumn flair.

  6. Serve: Serve your Pumpkin Spice Latte Cocktail immediately and enjoy!

Maple Bacon Brussels Sprouts


  • 1 lb Bacon, cut into 1 in pieces
  • 1 1/2 lbs Brussels sprouts, cut in half
  • 1/4 cup Olive oil
  • 1/4 cup Maple syrup
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  1. In a large skillet add bacon and turn heat to medium low. Cook until bacon is golden and begins to crisp. Using a slotted spoon remove the bacon from pan.
  2. Remove all but 1 tbsp of bacon fat from pan and add in olive oil. Turn heat up to medium high. Add Brussels sprouts cut side down to the pan and allow to cook without disturbing for 4-5 minutes or until the sprouts begin to char. Once they are browned, flip the sprouts over and stir continuously until they start to get tender, about 3-4 minutes.
  3. Return cooked bacon to the pan along with maple syrup and ½ tsp of salt and pepper. Stir until sprouts are coated in the maple syrup. Remove maple bacon brussels sprouts from pan and enjoy!
