Summer is here, so don't miss out on your chance to take advantage of all the great local produce and ingredients that are available!  This recipe is a summer showcase that will please a crowd.   Stop by your local farmers market to pick up everything you need for this dish.  The tomato is the star of the show so make sure you choose local vine ripened tomatoes (preferably from New Jersey ) Pair with a light, acidic, and refreshing wine for a winning combination.   Suggested pairings, and purchasing options below.

Thick Sliced Tomato Salad

Thick sliced local tomatoes topped with crumbled gorgonzola cheese, freshly chopped basil, fried shallots, and poppy seed vinaigrette.

 

     Ingredients

  • 1 or 2 large local tomato's
  • 4 large shallots
  • 5 basil leaves
  • 1 cup crumbled gorgonzola
  • 1 cup flour
  • 2 cups butter milk
  • 2 tbs poppy seed vinaigrette
  • 4 cups vegetable oil for frying

Slice your shallots, and add them to a medium sized bowl.  Pour butter milk over sliced shallots and let soak for a few minuses.  Remove shallots from butter milk and toss lightly in flour.  Add vegetable oil to a dutch oven and heat to 350 degrees.   Fry shallots for about 2 minutes or until golden brown, remove from oil season to taste with salt and pepper.  Drizzle 1 table spoon off poppy seed vinaigrette onto your plate our serving tray.  Thick slice your tomato nd place layered onto your serving dish directly on top on your vinaigrette.  Top with your fried shallots, crumbled gorgonzola, and some fresh rough chopped basil.  Drizzle with remaining vinaigrette.   Serve and enjoy!

Wake Me Up Cocktail

  • Tall glass filled with ice
  • 3-4 dashes orange bitters
  • .5 -1 oz Grand Mariner
  • 1.5 oz Teremana Blanco
  • 3-4 oz Zoa orange energy drink
  • Top with orange juice.
